Healthy Oatmeal Raisin Breakfast Cookies


At this point are you trying to decide if you actually read the title to this blog post correctly? Cookies for breakfast? You got it! A special treat heading your way this afternoon to counteract those Monday blues. Get your baking utensils ready because your next breakfast is just one step away from becoming irresistibly delicious! 

Let's start off with a little confession - the first time I built this recipe, the 'dough like' materials barely made it into the oven. This is a little secret about myself that only my husband and close family know about me. I love the batter of a cookie more than the actual cookie itself! There's a luxury of trying a bite (or a few, but I won't tell) before the timer goes off.

Jars of oatmeal, dozens of bananas, and pounds of raisins have come in and gone out of my home after the trial and error period before these cookies big break here on the blog. This is a cookie like no other. Healthy and nutritious, featuring a new take on an old-fashioned favorite, oatmeal raisin. Nothing new here when I say this is a recipe that can be reconstructed to meet any dietary needs. And because we're going to be using oatmeal instead of flour, I can testify this to be a morning meal, am I right? 

Here's an added bonus, all of the ingredients we will be using are a quick source of usable energy and vital vitamins. What better way to start the day! You can even use these cookies as a pre-workout snack before hitting the gym. They're versatile enough to be eaten at any time during your busy schedule. Did I mention that I even have back up dough in the fridge for when I run out? I most definitely do. 

There are some great added benefits in swapping out all flour and using oatmeal instead because oats are among the healthiest grains on earth. The nutrient composition is well balanced, they are a good source of carbs, fiber, and rich in antioxidants. Did you know that to eat well, it's best to choose a mix of nutrient-dense foods every day? It's an extremely easy treat to share and also benefit others. 

Breakfast oatmeal raisin cookies

Healthy Vegan & Gluten Free, healthy breakfast cookies.
Serves: 12 cookies

  • 1 cup oatmeal 
  • 1 medium ripe banana
  • 1 cup raisins 
  • 1 tsp black molasses 
  • 1/2 tsp cinnamon
  • 1 tsp pumpkin protein powder (I used pumpkin protein powder) 
  • 1 packet natural stevia 
  • Pinch of salt
  • 1/4 cup coconut oil
  • Optional add-ins: dairy-free chocolate chips, nuts, shredded coconut, fruit.
  1. Pre-heat oven to 350 degrees.
  2. Mash the banana in a medium size mixing bowl making sure to leave no big chunks. 
  3. Add all other ingredients into the bowl except for the coconut oil! Don't worry about mixing here.
  4. Next, melt down the coconut oil into a liquid form and mix well with the ingredients until combined. If it feels too liquidy, add a few sprinkled of oats until comfortable enough to form into cookies.
  5. Using a cookie scooper or a spoon, scoop 1-2 tbsp of mixture and lay on greased baking sheet, making sure to flatten each cookie out since they won't expand very much.
  6. Bake for 20 minutes. I've found this time gives them the perfect soft and crunchy texture!
  7. Remove from oven and let cool. 
  8. Serve immediately or store in the fridge for several days. 
  • If you double or split this recipe, make sure use all your ingredients to cook the batch. If you store this in the fridge, they crumble more.
  • We can use the crumbling to as an advantage because this mix could double if used to make as a granola instead! Just follow them same steps until you reach number five. Skip that and add on a baking sheet as is.
